Located in the heart of Jerusalem, Thinkers Distillery draws inspiration from the city's unique environment and cultural heritage. Rather than relying on a single agricultural terroir, the distillery sources carefully selected ingredients suited to each spirit. Its vodka uses premium soft red winter wheat from France's Champagne region, while its gins feature botanicals including juniper, citrus, rose petals, and spices. One of its most distinctive innovations is the use of purified water harvested from Jerusalem's air, contributing to the spirits' smooth texture and balance. The distillery's bourbon follows a different journey: distilled and initially barrelled in the United States, it undergoes further maturation in Israel, bringing together American whiskey traditions and local ageing conditions.

Founded by entrepreneurs including Bennett Kaplan, the distillery was created with a vision of combining traditional spirits craftsmanship with scientific research and modern technology.
