A classic Jerez fino made in the traditional method of the criaderas and solera system. The grape juice, which comes from a single vineyard with 25-year old vines, in Macharnudo Alto, a high-altitude area renowned for its pure Albariza soil.
Inocente is one of the last fino sherries to be fermented in 600 litre American oak casks for 2 to 3 months. The base wines are then classified and fortified to 15.5%. They are stored as sobretabla for at least a year, until they enter a solera with 10 criaderas, which is an unusually high number for a fino of Jerez. Each scale consists of 70 barrels. When bottled, Inocente is a wine of about 10-years old, which is taken out of the solera in spring and autumn of each year.
A complex, rich aroma with light toast, salted almonds and dried fruit. Dry, full-bodied and very elegant with apples, grapefruit, lemon peel and herbal notes layered against oak flavours. Very persistent finish with a good balance of saltiness, nuts and just the faintest kiss of caramel.
