Coming from the vineyard known as “La Loma“, which is at an altitude of 700m with a clay-calcareous, along with the sea’s influence, gives this sauvignon blanc its features, such as its freshness and great maturity.
The grapes are macerated at low temperature for a few hours, in this way we further extract the aromatic precursors from the skin. Subsequently, the natural must is cleaned by cold soaking to extract flavour before fermentation for approximately 10-12 days. After the first racking, once the fermentation is finished, constant removal of the yeasts is carried out before placed in the barrel.
In the glass, we find a pale golden yellow wine with light greenish iridescence. On the nose, it displays an aromatic symphony of fresh fruit, such as citrus, tropical and white flowers. On the palate, we find a very fresh, dry and fruity white, with a remarkable volume that contrasts with its acidity, achieving an elegant and balanced wine.
