A particular feature of the vineyard is the clay soils with worn pebbles in the Boutenac terroir, enabling roots to go deep leading to perfect balance between the vine and the soil. Grapes grown here must endure the hot and dry Mediterranean climate. Manual harvesting for whole-grape vinification (carbonic maceration) with a long vatting period (20 days). The wine then undergoes malolactic fermentation.
This wine is a deep red cherry colour and reveals flavours of fresh red fruit combined with a velvety structure, both characteristic of carbonic maceration. Eminently Mediterranean with its round midpalate and wonderful acidic balance gives it a long, wonderfully fresh finish.
