You don’t have a fireplace to warm you but you do have gin, honey and lemon.The toddy originated in British controlled India way back in 1610. The Hindi word ‘toddy’ meant ‘beverage fermented with palm sap’. By 1786, toddy was offically known as ‘beverage made with alcohol liquor with hot water, sugar and spices’ and in typical British colonial era fashion we claimed it as our own.

1. 60ml Langley’s Old Tom, 2. 30ml Lemon Juice, 3. 10ml Sugar Syrup, 4. Boiling Water, 5. Teaspoon of honey, 5. Star Anise, 6. Cinnamon stick, 7. Lemon Wheel

1. Add 60ml Langley’s Old Tom Gin, boiling water and sugar syrup to glass / mug 2. Stir teaspoon of honey until dissolved, 3. Garnish with lemon wheel, cinnamon stick and star anise
Winter is coming
The Langley’s Old Tom Chocolate G&T is simple to execute. The dark chocolate complements the spiced notes of the gin whilst the orange peel provides a freshness and slight bitteness on the pallete which provides balance to the subtle sweetness typical of an Old Tom gin.

1. Fill a copa glass full with cubed ice and pour over 50ml of Langley’s Old Tom, 2. Top with classic Indian tonic water, 3. Garnish with orange peel, 4. Place a shard of dark chocolate carefully into the glass.

Ingredients
1.7 oz Friedrichs Dry Gin; 1 oz. fresh lemon juice; 0.7 oz. raspberry syrup; 1 eggwhite; 1 thyme sprig; 1 orange zest
Cocktail Execution
Separate egg white from egg yolk. Add Gin, lemon juice, raspberry syrup and egg white into mixing glass, stir to mix. Pour into shaker and shake. Place into glass and garnish with thyme sprig and orange zest.

1.7 oz. Friedrichs Dry Gin; 0.5 oz. fresh lemon juice; 1 shot unfiltered apple juice; 1 apple (e.g. Cox Orange); 2 oz. cold Tonic Water (e.g. Fever Tree or Thomas Henry); ice cubes

Cut apple into thin slices. Drip lemon juice over the apple slices. Place ice cubes in glass and add the gin. Add the apple juice and fill up with tonic water.

50ml Pineapple Juice
25ml Lime Juice
25ml Passion Fruit Syrup
Pineapple to garnish
Cocktail Execution
Add all ingredients to a tumbler, fill with ice, then give it a good shake. Double strain into a coupe glass and garnish.
