Among the 150+ products Azureau introduces to the Ontario market every year, there is one that perpetually causes us to scratch our heads in wonder. Cava. That delightfully fresh sparkling wine from the Penedes region surrounding Barcelona offers such mind boggling value it sometimes defies logic.
It is made according to the same technique as Champagne. Before aging in the bottle in subterranean caves, Cava undergoes a secondary fermentation in the bottle on its lees (expired yeasts) giving the wine a faint “bready” aroma. Yet Cava abounds with Green apple notes and in the case of Cava Rose, lillac, cherries, and fresh summer strawberries.
