Tzora Vineyards Judean Hills, IsraelFor Tzora Vineyards, the message is in the “terroir,” or the sense of place. It’s a lens through which the winery appreciates the effect of a vineyard’s soil and climate on the colour, scent and taste of the wine produced in the area. Founded in 1993, Tzora nurtures three vineyards in Israel’s breathtaking Judean Hills, near Jerusalem: one in Giv’at Hachalukim; one in Shoresh; and one in Neve Ilan. Winery founder Ronnie James was inspired by the region and set out to produce wines that reflected the best terroirs of a region so well-suited for growing wine grapes. Cool winters, chilly summer nights and morning mists join with soil variations to contribute to the character, balance and great longevity of Tzora wines.

The Wines We LoveJudean Hills LCBO, $23.95
The Judean Hills Cabernet Sauvignon is made from grapes grown on old terraces in mineral-rich limestone soil. The must underwent cold maceration before fermenting in order to enhance the fruit flavour. Aged for 12 months in French oak barrels, this wine offers enhanced minerality and a fairly long finish. Judean Hills is ready to drink upon purchase, but it will continue to improve in the bottle for the next couple of years.
